Major Marg + Great Guac = Cinco de Mayo!

The Headlines:

These are my top 2 Cinco de Mayo recipes!

They should be yours too!




This is the weekend, approaching the day, that everyone pretends to be Mexican.  You may truly be a Scottish, Hungarian, Iranian mix… but this weekend you're part Mexican too, right?  Why?  Because you're celebrating Cinco de Mayo!  Well let me help you do that my friends!  BP (the husband) makes the 2 best Mexican dishes I've ever had, hands down.  I would put his up against any Mexican restaurant.  Which is saying a lot because I like me some restaurants!  Plus, well, y'know, I am One Picky….. you get the idea!

I posted these before, when I first started my blog and I'm not sure I had even told anyone it was up so I'm re-posting!  Okay here goes:


Guacamole
BP's guacamole is good, really good.  Everyone who eats it raves... and this picky chick is no exception.. I've even gotten fairly good about making it myself!  The problem is, he really doesn't have an official recipe.  But here goes:


6 avocados, chunky sliced
yellow onion chopped
cilantro
6 roma tomatoes chopped
tabasco (not too many drops!)
onion powder
garlic salt (be generous with this)
pepper (not too much of this)
lime juice  (lots of this too)

Toss the chunky cut avocados into a large bowl, add diced tomatoes, diced onions, chopped cilantro. Then add all the rest of the spices to taste.  I know it's not much... but as long as you taste test it a lot you will come up with something awesome!!  Another idea - that really adds some zest and Oooooos and Ahhhhhs… is when you stick some pomegranate seeds in there.  SO pretty and it adds even more pizzazz on top of an already excellent dish!


Moving on.  Clearly, no Cinco de Mayo Celebration - for participants 21 and over - is complete without this...

Mother of Margs

This one is so easy to make and so yummy to consume.  People la-la-love these.
But ******the key****** hand downs here... is the fresh lime juice!  I can NOT stress that enough.  A margarita made with that bottled lime concentrate mix stuff is just not going to cut it.  I repeat - it WILL NOT cut it!  Once you try the fresh lime juice, mixed carefully with all the other stuff below… you will never buy that bottled lime what's it who ha thing again.

But I will warn you, they're too easy to drink - so please limit yourself!  I have had grown men drink 2-3 of them in the pool at our house and the next day is not kind!  Don't worry their wives were driving them home!

This is for a pitcher of margaritas:
25 oz lime juice
750 ml of tequila (1800 is out of this world!)
6 oz agave nectar
5 oz orange liqueur (we used Maison Prunier Orange Liqueur but Grand Mariner or Cointreau works too!)

Very simply drop all those ingredients together into a pitcher... and mix.  Rim glasses with salt at least an hour prior to making drinks (it hardens and stays on so much better that way)... I used colored salt because how much cooler looking is that...?  Then, put ice in glass and shake up one margarita at a time.  It should produce 8-10 drinks.


Also, don't be afraid of the color at first… ugly, huh?  It looks like this when there's real lime juice.  Not very pretty. But once it gets shaken, as you can see above... it becomes much better looking.  Also, please remember:  it's strong.  Good but potent.  We serve them in the beginning of our party!  Designated drivers recommended!    

Lastly, I have to tell you what I may experiment with over the weekend.  A Prickly Pear Margarita!  A fellow blogger gal at Working Mom Magic (and news producer out of Miami) put one on her blog today and it looks pretty darn good!  We hear in Arizona like our Prickly Pear too so we just may have to go there!  If I like it and/or change it a bit I may re-post later this summer!  But for now, click Prickly Pear Marg if you want to see her concoction!

  2. I miss my west coast Mexi restaurants!! grrr!! The guac looks amazing and although I had a pretty yummy "Miami" margarita today... I'm sure this one would've blown it out of the water!!!
