The Headlines:
Kids are hard to feed.
My husband is hard to please.
Dinner together is hard.
This works.
I have mentioned a few times here that if I'm "One Picky Chick," BP (my husband) could be described as "One Picky Dude"… not sure of he was born like that or if my influence has made him more critical over the years but… he's a particular man. Then there's children. Toddlers, in particular, who basically think the world revolves around them. There's no question in my mind that my son, who is 3, thinks that my sole purpose on this earth is to make sure he's taken care of in any and all ways and whims… 24/7!!! So, needless to say, when it's time to make a dinner that all 4 of us can sit down and enjoy together. It's no small task!
It happens rarely, actually. We all come together for a weeknight dinner only on occasion. My parents hate that fact. They think it's - Oh so important - and I agree but it's just not our reality. Why? Well, if you're a mom - you know - kids are busy these days. My daughter takes tennis, does girl scouts, is in her dance competition team and takes Spanish after school. Add to that, BP travels quite a bit and spends many nights going to dinner or events. Therefore, I say again - weeknight dinners together are rare and I take them seriously! Plus, I don't feed my kids just anything. Health matters here. They have never had chicken nuggets! Maybe once at a restaurant. Not to mention, I have no time. Once again - no idea how that is possible - stay at home mom here - but it just is… Anyways, last night, we had one of these rare occasions, where everyone was eating together, so I made this...
I call it Southwestern Egg Pizza to get the kids psyched up about it and to get BP hyped too! He loves almost anything with salsa. And he loved this!
Ingredients:
8 eggs
1 onion, chopped
1 red bell pepper, chopped
1 cup black beans
2 cups shredded cheddar cheese
1 tsp cumin
1 tsp
1/2 tsp salt
salsa (optional)
cilantro (optional)
sour cream (optional)
In a frying pan, use medium/high heat to "sauté" the onion and bell pepper.
Once it's softened, thrown in your cumin, chili powder, salt and stir. Put in a 10 inch, circular baking dish and add beans, then beaten eggs, then the cheddar. Spread it around so it's evenly laid out.
Put it in the oven at 350 for about 20 minutes. When it's done i should look like this.
My kids liked dipping the bites in salsa. Cilantro would be AWESOME sprinkled over this but I forgot it at the store. A dollop of sour cream would work well too. Savannah, my daughter, liked it so much she asked if we could serve it to her cousins when they came to visit this summer. And that my friends, is the official stamp of approval since she's been planning every moment this trip for months now.
We said a prayer, the kids fought for "air time" (my little guy talks non-stop), they laughed, sang, ate and enjoyed! Successful, quick, easy, inexpensive, YUMMY yet healthy dinner for 4! Now that's what I'm talking about. One Picky Family, happy.

Cut it like a pizza, serve.
Other thoughts… you could actually make your own "Egg Pizza" with whatever ingredients you want. Like an omelet, anything will work. To make it more "pizza-y" you could do tomatoes and mushrooms, some italian seasoning, basil, cheese of course… that sort of thing
